Ingredients:

- 1 lb lamb or mutton, cubed


- 2 large potatoes, peeled and thinly sliced


- 1 large onion, peeled and thinly sliced


- 2 carrots, peeled and thinly sliced


- 2 tablespoons butter


- 2 tablespoons plain flour


- 2 tablespoons Worcestershire sauce


- 1 pint (570 ml) lamb or beef stock


- 4 tablespoons fresh parsley, finely chopped


- Salt and freshly ground black pepper, to taste

Instructions:

1. Preheat the oven to 350°F (180°C).

2. Place the cubed lamb into a large ovenproof dish. Top with the potatoes, onion and carrots.

3. In a saucepan, melt the butter and stir in the flour. Cook, stirring, for 1-2 minutes.

4. Gradually stir in the stock, Worcestershire sauce and parsley, stirring well until the sauce is smooth and thickened.

5. Pour the sauce over the lamb and vegetables, season with salt and pepper and stir to combine.

6. Cover the dish with a lid or foil and bake for 1½ hours.

7. Serve hot with crusty bread or mashed potatoes.
